Southwestern Lasagna
If I accept the opportunity to turn anything into lasagna, yous can bet I'm going to practice it! This Southwestern Lasagna was a weekly occurrence for us growing up in Arizona.
Back in the day, my mom took advantage of a few piece of cake shop bought ingredients and layered information technology up to make the virtually delicious and like shooting fish in a barrel weeknight dinner! The answer is kinda-sorta. Unlike regular lasagna which is layers of ricotta, bolognese and lasagna sheets, this Southwestern Lasagna is made up of layers of tortillas, Mexican cheeses and taco meat. Same concept but totally different flavor profile. It'due south basically a cheesy chicken Mexican lasagna and I am here for information technology.
I utilise flour tortilla instead of pasta, basis turkey mixed with taco seasoning instead of a bolognese sauce and tons of refried beans and greenish chiles, plus tomatoes and corn as the filling. Southwestern Lasagna
Southwestern Lasagna is made up of layers of tortillas, Mexican cheeses and taco meat

- ane pound ground turkey meat
- 1 yellow onion chopped
- i tablespoon taco seasoning
- ane/4 teaspoon table salt
- four cloves garlic chopped
- i x-ounce tin can diced tomatoes and dark-green chiles
- 1 5.25 ounce can whole dark-green chiles drained and roughly chopped
- 3 small flour tortillas
- ane cup fresh corn
- i 16-ounce can refried beans
- 1 1/ii cups shredded Colby jack cheese
- 1/2 cup chopped tomato
- one/2 cup chopped dark-green onions
- 2 tbsp fresh cilantro leaves

Preheat oven to 375 F and coat an viii-inch skillet with baking spray.

Oestrus a large skillet over medium high heat. Add some olive oil and sauté the turkey meat and onion until the turkey is cooked through, about 10 minutes. Add the taco seasoning, table salt and garlic and mix to combine. Add diced tomatoes and light-green chiles continue to cook until the liquid evaporates.

Spoon 1/2 of the taco meat into the skillet. Lay the tortillas in an overlapping way on top of the taco meat. Advisedly smear a layer of refried beans on meridian of the tortillas. Followed by the remaining taco meat. Then add a layer of corn.

Bake for 20 minutes. Remove and add the cheese. Season with salt and pepper. Bake for an additional 10 minutes until the cheese is melted. Garnish with the chopped tomatoes, chopped green onions and cilantro. Serve
